If I could offer an expansion of #7, olive oil can be used to keep cast iron in good shape between uses, too. After I clean my cast iron, I always use a paper towel to apply a thin layer of olive oil on the cooking surface. This protects it, preps it for the next use, and if one lives in a very humid climate prevents rust.</description>
